During the fall, we hear and smell pumpkin pie spice everywhere. This recipe is no different. I love pumpkin pie spice, in particular, the cinnamon (Affiliate Link). The fact that its aroma is so pronounced and you can still smell it when you cook it, it's one of my favorite items to add to pancakes and waffles. This Pumpkin Waffles recipe is wonderful for people with food sensitivities. Be sure you can have cinnamon (Affiliate Link) in your diet before trying this recipe. I am enjoying using cashew milk for your recipes these days. It's more mild than almond. And, I feel it has less of an aftertaste than coconut and almond milk. Try it and see. If you want to stick with your brand of milk, feel free. It should work.
Yummy Gluten Free Dairy Free Pumpkin Waffles Recipe Your Kids Are Going To Love
Ingredients:
GF pancake mix double batch (2.5 cups) + 3 tablespoon to make it thicker
1 cup of pumpkin puree
1.5 cups cashew milk
6 tablespoon vegetable oil
6 tablespoon egg whites
4 teaspoon Pumpkin Pie Spice
5 oz (half a bag) of Tollhouse Pumpkin Spice Morsels
Instructions:
Add all the ingredients above in a bowl and stir until mixed.
Let sit for a few minutes while the waffle iron (Affiliate Link) heats up.
Spray the hot waffle iron (Affiliate Link).
Pour some of the mix onto the heated waffle iron (Affiliate Link) according to the manufacturer's instructions.
Serve hot.

Note: no need to add syrup. It's sweet enough without it. If you want you can remove the morsels. Then it won't be as sweet.
