Pineapple Banana Gluten-Free Cake Recipe

As you can see from my previous recipes, I am not a baker.  I prefer making a meal to dessert.  One reason is that I am sensitive to butter, so why bother if I can't use butter? In the next few weeks, I plan on making easy, fun "weekday" cakes you can use together for your family.  This Pineapple Banana Gluten Free Cake is really easy.  I think of it like a dump cake but with gluten-free flour.

Pineapple banana gluten-free cake recipe ingredients:

2 ripe Bananas, mashed
I used Betty Crocker's Yellow Gluten Free cake mix. Below, 4 items are needed for this box cake.
1 stick of Butter (softened)
⅔ cup of Water
2 teaspoon Gluten-Free Vanilla
3 Eggs
4 slices sliced Pineapples chopped into small pieces (canned works fine), a total ½ cup
2 teaspoon ground Cinnamon
Your favorite vanilla icing or Cream Cheese is recommended.

Pineapple banana gluten-free cake recipe Instructions:

Mash bananas first.

Add softened butter, water, vanilla, and eggs and mix well.

Now, add cinnamon and cake mix.

Add the pineapples.

Pour into two 9-inch greased round pans. Bake for 40-46 minutes. Cool completely.

Turn over and remove from pans onto a serving dish.

Place one layer down, and ice the top. Then add the top layer and ice the top and sides.

We used leftover icing. One was the pink tint. =) It was leftover from Valentine's Day. It is recommended to use Cream Cheese icing.  Or, you can do what we did and use regular vanilla icing.

Ingredients
