This is called the "Special Chocolate Cupcakes" recipe from my husband's side of the family. It's the cake we make every year for his birthday since he was little. I've made it for 20 years now. Wow, how time flies. So, you know it is a "special" cake. It includes a marshmallow icing with isn't really sweet but it has its own set of directions. The recipe makes 24 cupcakes easily and is perfect for a family birthday party gathering. I hope you enjoy it.

This is broken up into two recipes, one for cake and one for icing. If you want just to make the cake and use your own icing, that works too.
What ingredients are in these Special Chocolate Cupcakes?
2 cup flour
2 cup sugar
¾ cup cocoa
1 teaspoon salt
2 teaspoon baking soda
1 teaspoon baking powder
2 eggs
½ cup cooking oil
1 cup milk
One teaspoon vanilla
1 cup COLD coffee
Now that you have cooled the coffee, you are ready to make the moistest chocolate cupcakes you will ever taste!
How to make moist chocolate cupcakes?
Make 1 cup of coffee and let cool in fridge till needed.
Preheat oven to 350 degrees.
Combine and sift together in a separate bowl: flour, sugar, cocoa, salt, baking soda, baking powder.
In the mixer (Affiliate Link) bowl, blend eggs, oil, milk, and vanilla.
Then add dry mixture. Mix thoroughly and stir in the Cold Coffee.
Pour into 24 cupcakes liners and bake for 25 minutes at 350 degrees.

Ingredients for Icing:
1 cup confection sugar
¼ cup flour
1 cup milk
One cup half butter/half shortening (or all butter)
1 teaspoon vanilla
Instructions for Icing:
Combine flour and milk by adding milk slowly and whisking the flour into the milk until smooth.
Set over moderate heat and stir until thickened. Let cool completely. This is how it looks after it cools. Don't rush the process.
Combine confectioner sugar with shortening and butter (or all butter) and beat until light and fluffy.
Stir in well-cooled flour and milk mixture. Beat on high-speed till thoroughly mixed and fluffy.
Add to the top of the cupcakes.
