Grilling is a great way to keep the inside cool and clean from all the mess of prepping the kitchen. To help you keep your kitchen cleaner and your home cooler, I am sharing an easy and quick Lemon chicken recipe to help you prepare a weekend meal during the week.
My mother would make these types of grill dishes all the time when I was a kid, and I decided to continue the tradition with my family. It's a recipe that the entire family enjoyed, young and old. I especially love this dish in the warmer months, served with romaine or spinach salad.

What ingredients do I need to make this Grilled Rosemary Garlic and Lemon Chicken Recipe?
3 Tablespoons fresh rosemary chopped
4 cloves of garlic minced
3 Tablespoons of lemon juice
4 Tablespoons of Olive Oil (Affiliate Link)
1 ½ lb chicken thighs (boneless, skinless)
1 teaspoon smoked paprika
How to make this Grilled Rosemary Garlic and Lemon Chicken Recipe?
Chop the fresh rosemary and set it aside. Then, chop up the garlic and set it aside. Measure out the rest of the ingredients.
Add all the rest of the ingredients into a bowl and marinate for 1-2 hours. The more you marinate it, the better the chicken becomes. So, feel free if you need to do it before you go to work.

Add the chicken thighs to a hot, cleaned grill. Visit our post about How to easily clean your grill.
Cook on the preheated grill for 30 minutes, turning every 15 minutes.
Let cool for a few minutes, and slice and serve with a salad.
Substitutions:
If you use dried rosemary (Affiliate Link), soak it in the olive oil (Affiliate Link) for a little bit before mixing and marinating the chicken thighs.
Tips:
This recipe can also be a freezer meal. All you need to do is toss all the items above in a freezer baggie and place them in the freezer. And when you take it out to defrost, it will continue to marinate.

Oh, there's that smoked paprika again!
