I started the Keto Diet so my recipes for a while will be my experiments to help me and my family stay on this diet change. Here's my first recipe Chicken Asparagus and Tomatoes Sheet Pan Dinner Recipe. If you haven't heard of sheet pan dinner, it's when you cook an entire meal on a cookie sheet (Affiliate Link). Simple Ingredients for Chicken Asparagus and Tomatoes Sheet Pan Recipe:
One Cookie Sheet (Affiliate Link) covered with Parchment paper (Affiliate Link)
4 pieces of Chicken Thighs with skin
1 tablespoon Smoked Paprika
2 tablespoon Rosemary (Fresh) minced into small pieces
2 tablespoon Avocado oil (high heat)
3 strips of bacon
1 bunch of Asparagus Cleaned and cut shorter
1 teaspoon Granulated Garlic
½ bunch of grape tomatoes washed
Salt and pepper to taste
Easy Instructions:
Preheat oven to 400 degrees. Add the parchment paper to the baking sheet.
Add the following ingredients to a bowl with the chicken in it: smoked paprika, rosemary, avocado oil, salt, and pepper. Toss well to coat the chicken.
Place the chicken on one side of the cookie sheet (Affiliate Link) and three strips of bacon on the other side. Bake in the oven for 25 minutes. Pull out.
Meanwhile, toss the asparagus and the tomatoes with granulated garlic, salt, and pepper.
Then, when the chicken is finished cooking at the 25-minute mark, remove the bacon and add the tomatoes and asparagus to the sheet pan. Cook for an additional 15-20 minutes until the asparagus and the tomatoes are cooked. Pull out and let sit for a few minutes then serve.
Chop up the bacon add as a topping for the asparagus.
