GF DF Almond Coconut Cranberry Gooey Chex Mix Recipe Ingredients

- 4 cups Corn Chex Cereal gluten-free (affiliate)
- 2 cups unsweetened coconut flakes (affiliate)
- ¾ cup to 1 cup of dried cranberries (affiliate)
- 1 ¼ cups sliced almonds (affiliate)
- 1 cup granulated sugar
- 1 cup light corn syrup (affiliate)
- ¾ cup DF butter alternative - Earth Balance Vegan Vegetable Oil Spread Buttery Sticks (affiliate)
- 1 teaspoon vanilla extract (Affiliate Link)

GF DF Almond Coconut Cranberry Gooey Chex Mix Recipe Instructions
Below are the step-by-step instructions to help you make this recipe for a snack or give it as a gift.
Mix the Rice Chex cereal, Corn Chex cereal, coconut flakes, dried cranberries, and sliced almonds in a large bowl.
Melt the dairy-free butter alternative in a medium to high-heat saucepan.
Add the corn syrup and sugar to boil for 3 minutes - about 240 degrees Fahrenheit when melted.
Remove from heat, add the vanilla extract (Affiliate Link), and stir in thoroughly.
Then, pour the syrup over the Chex mix and toss until it is completely coated. Using your clean hands may work better so as not to break the Chex cereal.
Place the trays out and add an even amount to each tray. This recipe makes four 8-inch wide by 1-inch-high Chex mix pie pan sizes.
Cover it completely in an airtight container at room temperature, or it will become a brick.
I used a Holiday version of Press and Seal(affiliate) so it would stick to itself. Then, I decided to cut out tags with my Cricut (Affiliate Link) maker.

You can add various things to this recipe to change it. Below are just some ingredients that would work well. Be sure to swap out one for one ingredient so the quantity is still the same and there is enough syrup to coat the entire recipe.
- Dried mangos - you will need to chop up the mangos.
- Candied orange peel is an excellent option for a sweet taste.
- Dried pineapple - you will need to cut down these pieces.
- Dried raisins - these can easily substitute for dried cranberries.
- Dried apricots - if you like them.

Storage
