I feel that muffins can help you measure how much you are eating. If you make smaller muffins and not those jumbo size muffins that is. You can enjoy one and not feel like it's killing your diet. Here is a seasonal muffin favorite recipe: Pumpkin Pecan Chocolate Chip Muffin recipe with a little surprise as a topping. Read on to see how I made these delicious muffins.
Ingredients:
¾ cup sugar (organic or regular)
¼ cup Canola oil or Vegetable oil
2 eggs
1 tablespoon Pumpkin Spice Bakery Emulsion (optional)
1 teaspoon vanilla extract
¼ cup water
¾ cup pumpkin
1.5 cups flour (or whole grain pastry flour)
¾ teaspoon baking powder
¼ teaspoon baking soda
¼ teaspoon cloves (ground)
½ teaspoon cinnamon (ground)
¼ teaspoon nutmeg (ground)
¼ teaspoon salt
½ cup semisweet chocolate chips
½ cup pecans (chopped)
Glaze ingredients (optional)
3 tablespoon maple syrup
1 teaspoon vanilla extract
2 tablespoon milk
1-½ cup powdered sugar (start with 1 cup and add as needed)
2 cooked bacon strips for garnish (optional)
Instructions:
Preheat oven to 400 degrees. Place 12 muffin liners in the muffin pan.
Mix ¾ cup sugar (organic or regular), ¼ cup Canola oil or Vegetable oil, 2 eggs, 1 tablespoon Pumpkin Spice Bakery Emulsion (optional), 1 teaspoon vanilla extract, ¼ cup water, and ¾ cup pumpkin. Mix well.
In a separate bowl, mix 1.5 cups flour (or whole grain pastry flour), ¾ teaspoon baking powder, ¼ teaspoon baking soda, ¼ teaspoon cloves (ground), ½ teaspoon cinnamon (ground), ¼ teaspoon nutmeg (ground), and ¼ teaspoon salt.
Slowly add the dried ingredients into the wet ingredients and mix well.
After well mixed, stir in ½ cup semisweet chocolate chips and ½ cup pecans (chopped).
Place batter into the muffin liners to fill about ⅔ full.
Bake for 20 - 22 minutes.
Remove and let cool, then make the glaze if you wish and cook the bacon.
Drizzle on top with a spoon or turn over and coat the entire top of the muffin with the glaze. Then, add the bacon for garish.
