Some years ago, I started making black bean burgers. It's a great recipe for Meatless Mondays. They are so easy to make, and you can pretty much make them for a quick meal during the week, especially when you forget to pull something out for dinner. Basically, all these items come from the pantry (Affiliate Link). So, today I am going to share a recipe called the red pepper black bean sliders recipe.
Easy to Make Red Pepper Black Bean Sliders

Simple Ingredients from the pantry and fridge:
30 oz cans of Black Beans - this total is usually two cans of cooked black beans
6 teaspoon Egg Whites - You can also use an egg substitute if you want.
2 tablespoon Oregano dried - you can use fresh if you want.
2 teaspoon Basil dried - Try fresh if you want.
1 small onion - make them small chopped pieces so you do not get a large bite of onion.
1 teaspoon of Granulated Garlic - if you have fresh garlic, add a little more than a teaspoon.
1 cup Panko bread crumbs - you can also try to use the Italian bread crumbs for more flavor.
½ cup Roasted Red Peppers chopped - I got these from the jarred section at the grocery store.
Easy Instructions to make black bean burgers:
Using a potato masher, mash black beans in a bowl. Then, mix the rest of the ingredients together.
Using a large ice cream scoop, scoop out a heaping scoop of the mix. Then, form into a small burger. You can make 10 slider burgers with this combination.
Below is what the burgers looked like after I pressed them down before they were sprayed with non-stick spray (Affiliate Link).
Preheat grill. Then, spray each patty with a non-stick spray (Affiliate Link) and then place the sprayed down on the grill or the burgers.
While they cook, cut cheese slices into 4 small squares. Make 14 small squares.
Cook the sliders on the grill for 5 minutes, then turn them over for 5 minutes. Add the cheese and start assembling the slider burgers.
Some additional notes about this recipe:
If you decide to make this gluten-free, adjust the gluten-free quantity. It will take much less than you think than regular bread crumbs.
If you use egg substitute, mix it well and follow the ratio listed on the back of the container.

What toppings to add to this black bean burger?
For the toppings, I then mixed Olive Oil (Affiliate Link) Mayonnaise and Sriracha sauce. I used baby spinach as the lettuce. This is a great weeknight grilling (Affiliate Link) recipe for the spring through the fall season.

- To make the burgers, mash black beans in a bowl using a potato masher. Cut up the red peppers into small pieces. Then, mix the rest of the ingredients.
- Using a large ice cream scoop, scoop out a heaping scoop of the mix. Then, form into a small burger. You can make ten slider burgers with this mix.
- Preheat grill. Then, spray each patty with a non-stick spray (Affiliate Link) and place the burgers spray side down on the grill.
- Cook for 5 minutes on the grill. Then turn over for another 5 minutes.
- OPTIONAL: Meanwhile, cut cheese slices into four small squares. Make 14 small squares. I used Muenster cheese slices.
- Then, add the cheese and take off the grill and start assembling the sliders.
- OPTIONAL: I mixed Olive Oil (Affiliate Link) Mayonnaise and Sriracha sauce for the toppings. I used baby spinach as the lettuce. Place the burgers on top or on a roll. Then, add the sauce to the top and enjoy.
- For the freezing method:
- I added them to wax paper and folded them up for freezing or grilling (Affiliate Link) later. Place the wax paper down, then add two burgers; then I added more wax paper and added two more burgers. I then covered the entire stack with wax paper. Then I placed them in a gallon bag and froze. They freeze very well.
- I pulled them out of the freezer and let them thaw for a few hours.
- Then, preheated the grill and added the oil to the burgers, and cooked for 5 minutes on both sides; add the cheese to melt. Then add to burger roll with toppings.
Notes
If you decide to make this gluten-free, be sure to adjust the gluten-free quantity. It will take a lot less than you may think than regular bread crumbs.

I would say it would make about 4 regular sized burgers.
