Yes, I know, what a title right? Cucumber summer chili recipe sounds disgusting. It's actually a cold salad that tastes like chili. Hang around and check it out. It's great for a summer weeknight light meal. We had it on a Sunday night when neither of us wanted to cook. The black beans filled us up and the lemon and lime gave us some flavoring. I decided not to use oil since I had an avocado in it. But, if you want to add a bit, you could.
Cucumber Summer Chili Recipe Ingredients:
2 English cucumbers (chopped into ¾ inch square pieces)
1 can of black beans (drained and rinsed)
1 large red pepper (chopped into ¾ inch square pieces)
1 cup of cherry tomatoes (cut in a half)
1 whole ripe avocado (chopped into cubes)
1 tsp ground cumin
Dressing:
1 tsp to Tbsp juice of a lime
1 juice of a lemon
Salt and pepper to taste

Prep all the ingredients above.
Then add to a bowl.
Add the dress and toss gently.
Serve immediately.

I had to laugh when I read your first paragraph because, yes, the name does sound disgusting! However, the recipe itself sounds delicious! Unfortunately my hubby doesn't care for avocado, but I may make it for some friends some time.
