The cucumber tomato black bean salad is a cold salad that tastes like chili. Hang around and check it out. It's great for a summer weeknight light meal.  We had it on a Sunday night when neither of us wanted to cook.  The black beans filled us up, and the lemon and lime gave us some flavoring.  I decided not to use oil since I had an avocado in it. But if you want to add a bit, you could.

Cucumber Tomato Black Bean Salad Recipe Ingredients:

2 English cucumbers (chopped into ¾ inch square pieces)
1 can of black beans (drained and rinsed)
1 large red pepper (chopped into ¾ inch square pieces)
One cup of cherry tomatoes (cut in half)
1 whole ripe avocado (chopped into cubes)
1 ½ cups of red onion (chopped)
One teaspoon ground cumin

The ingredients in the dressing

1 teaspoon to tablespoon juice of a lime
1 juice of a lemon
Salt and pepper to taste

How to make Cucumber Tomato Black Bean Salad Recipe?

First, rinse and prep all the ingredients above. You will need to chop up the cucumbers and set them aside. Chop up the red pepper into ¾-inch square pieces. Cut the cherry tomatoes in half and set aside. Chop the red onion and set aside. Then, cube up the fresh avocado after you remove the pit and rinse. Rinse the black beans from the can and set aside.

Then, measure out the cumin and set it aside.

Now, it's time to make the dressing.

Then, place all the ingredients, except for the avocado, into the bowl and toss gently.

Now add the avocado cubes and gently toss.

Serve immediately to minimize the discoloration of the avocados.

  1. The avocado must be ripe but not overly ripe. It will turn to mush when you mix it if it is too ripe.
  2. Prep all the ingredients before mixing them. This will prevent some ingredients from breaking down before adding other ingredients.
  3. Feel free to prep the black beans, pepper, and tomatoes beforehand and place them in a container. Cut the cucumber and avocado when you are ready to make the salad.
  4. Depending on your taste, add more or less of the dressing.

It is a yummy dish with beans and vegetables. Great for summer easy dinner nights. 


Ingredients

  • 2 English cucumbers (chopped into ¾ inch square pieces)
  • 1 can of black beans (drained and rinsed)

  • 1 cup of cherry tomatoes (cut in half)

    I had to laugh when I read your first paragraph because, yes, the name does sound disgusting! However, the recipe itself sounds delicious! Unfortunately my hubby doesn't care for avocado, but I may make it for some friends some time.
