 Zucchini Turkey Burger Recipe for a Weeknight Meal

I'm a big fan of grilling during the week. If I don't have to clean the kitchen after dinner, I am a happy girl. This recipe makes me super happy.  Not only do I not have to clean a lot after I eat, I also get to enjoy turkey which is one of my favorite meats. This Zucchini Turkey Burger Recipe for a Weeknight Meal is super juicy because I used dark turkey meat. You can find this type of meat at most stores. The Keto diet I am on wants me to eat meat with more fat in it. More fat for grilling is wonderful because it helps prevent the meat from drying out. Try it and see. If you decide to use a low-fat meat and find that it sticks too much to the grill, brush the meat with olive oil before (if possible) placing it on the grill.

Easy Ingredients:

2 small zucchini (cleaned, cut ends, shred)
1 lb of Dark Turkey breast (ground)
2 tablespoon Fajita mix seasonings
1 tablespoon avocado/coconut oil (high heat)
Salad or a roll
Optional Toppings: sliced tomatoes, sliced avocado, Mayo, Chipola Mayo, pickles

Quick Instructions:

Clean and shred the zucchini. Press the zucchini to extract the extra water. A little water is OK. Set aside.

Mix the Dark Turkey Breast with the zucchini. Add the fajita mix seasoning. Find a high-quality brand. Salt is OK but make sure you don't use too much. Place on Wax Paper to easily remove and transfer to the grill.

Catalina Crunch Low Carb Cereal

Cook for 10 minutes turn over and cook for another 10 minutes. Let sit for 5 minutes.

Serve with salad or burger roll. Top with sliced tomatoes, sliced avocado, Mayo, Chipola Mayo, and/or pickles.

  4. Place on Wax Paper to easily remove and transfer to the grill. Add with a brush the avocado/coconut oil (high heat) to the turkey burgers.
  5. Preheat grill.
  6. Add the turkey burgers to to the grill oil side down. Cook for 10 minutes turn over and cook for another 10 minutes. Let sit for 5 minutes.
