While eating Keto meals is different, it's not difficult. I modified this recipe from my original quick lemon chicken meal. While I never shared it on my blog, it is a recipe that I go to often. The only ingredient I added is the clarified butter. It added a buttery flavor to the chicken, which my son just loved. If you try it, you can go without the butter if you do not want it. Here is how I made this simple Lemon Dijon Chicken Thighs Recipe weeknight dish. Feel free to follow along or add additional ingredients.

Keto-Friendly Lemon Dijon Chicken Thighs Recipe
Simple Ingredients:
2 lb chicken thighs (boneless and Skinless)
1 tablespoon Herb De Provence (Affiliate Link)
1 tablespoon Dijon Mustard
2 Cloves garlic minced
3 tablespoon olive oil (Affiliate Link) and 1 tablespoon Clarified Butter
1 whole lemon juice (squeezed)
Quick Instructions:
- Add to a gallon baggie, and place chicken, herbs, dijon, olive oil (Affiliate Link), and lemon juice in it—Marinate for 20 minutes or overnight for more flavor.
- Heat skillet with 2 tablespoon of Ghee, and let melt.
- Add the content of the bag to the skillet. Situate them in the skillet so they do not overlap.
- Cook covered for 15 minutes. Then remove the lid for five more minutes to reduce the liquid and then brown.

Here's the final dish. I served it with sauteed broccoli rabe, and everyone devoured it. I sauteed the broccoli rabe in olive oil (Affiliate Link) with garlic powder. You can use fresh garlic minced as well if you prefer. I found it took longer to marinate than it did to cook this recipe. And that is my kind of recipe. How about you?
