Super Easy Lemon Dijon Chicken Thighs Recipe

Super Easy Lemon Dijon Chicken Thighs Recipe

While eating Keto meals is different, it's not difficult. I modified this recipe from my original quick lemon chicken meal. While I never shared it on my blog, it is a recipe that I go to often.  The only ingredient I added is the clarified butter.  It added a buttery flavor to the chicken which my son just loved. If you try it, you can go without the butter if you do not want it. Here is how I made this simple Lemon Dijon Chicken Thighs weeknight dish. Feel free to follow along or add additional ingredients.

Lemon Dijon Chicken Thighs Recipe for Any Weeknight Dinner

Simple Ingredients:

2 lb chicken thighs (boneless and Skinless)
1 tablespoon Herb De Provence
1 tablespoon Dijon Mustard
2 Cloves garlic minced
3 tablespoon olive oil and 1 tablespoon Clarified Butter
1 whole lemon juice (squeezed)

Quick Instructions:

  1. Add to a gallon baggie, chicken, herbs, dijon, olive oil and lemon juice. Marinate 20 mins or overnight for more flavor.
  2. Heat skillet with 2 tablespoon of Ghee, let melt.
  3. Add the content of the bag into the skillet. Situate in the skillet, so they are not overlapping.
  4. Cook covered for 15 minutes. Then remove lid for five more minutes to reduce the liquid and then brown.

Here's the final dish. I served it with sauteed broccoli rabe, and everyone devoured it. I sauteed the broccoli rabe in olive oil with garlic powder.  You can use fresh garlic minced as well if you prefer. I found it took longer to marinate than it did to cook this recipe.
