With the cold coming fast, it's time for warm weeknight dinners. And nothing is better than a slow cooker dinner recipe to keep you warm during those cold nights. This week's recipe is a Caribbean one. It has very little kick, but feel free to add more jerk seasoning if you want more spice.

What is Jerk Seasoning Paste?
Jerk seasoning paste is made of some water, garlic, brown sugar (Affiliate Link), vinegar, garlic, water, ginger, allspice, nutmeg, and thyme. Mixed to make a paste. We have added olive oil (Affiliate Link) or canola oil in the past.

What ingredients are in the Caribbean Sweet Potato and Black Bean Stew Recipe?
1 tablespoon Jerk seasoning paste
2 lb of sweet potatoes cut into small 1-inch cubes
One can 14 oz of black beans
1.25 cups of frozen string beans cut and defrosted (or frozen)
1.5 cups of frozen red peppers, green peppers, and onion slice mix
1 cup of vegetable broth
½ teaspoon of thyme
¼ teaspoon of cinnamon (Affiliate Link)
¼ teaspoon of salt
How do you make the Caribbean Sweet Potato and Black Bean Stew Recipe?
Cut the sweet potatoes into small ¾ to 1-inch cubes and place them in the slow cooker (Affiliate Link).
Measure out the rest of the ingredients. Rinse the can of black beans and set aside. Measure out the string beans and the peppers and onion mix. Measure the vegetable broth, jerk seasoning paste, thyme, cinnamon (Affiliate Link), and herbs.
I used Tropical Pepper Co. Island Jerk Seasoning for this dish. But we have used other brands as well. See the items below I found on Amazon.com (affiliate). You can also buy hot jerk seasoning or mild. It's up to you.

Combine the sweet potatoes, black beans, red pepper and onion mix, green beans, jerk seasoning, thyme, cinnamon (Affiliate Link), and salt in the slow cooker (Affiliate Link). Mix well.
Cook on low for 4-5 hours or until the vegetables are tender.
Turn on warm and adjust the salt if it needs it.
