Ingredients
¾ cup sugar (organic or regular)
¼ cup Canola oil or Vegetable oil
2 eggs
1 tablespoon Pumpkin Spice Bakery Emulsion (optional)
1 teaspoon vanilla extract (affiliate link)
¼ cup water
¾ cup pumpkin
1.5 cups flour (or whole grain pastry flour)
¾ teaspoon baking powder
¼ teaspoon baking soda
¼ teaspoon cloves (ground)
½ teaspoon cinnamon (affiliate link) (ground)
¼ teaspoon nutmeg (ground)
¼ teaspoon salt
½ cup semisweet chocolate chips
½ cup pecans (chopped)
Glaze ingredients (optional)
3 tablespoon maple syrup
1 teaspoon vanilla extract (affiliate link)
2 tablespoon milk
1-½ cup powdered sugar (start with 1 cup and add as needed)
2 cooked bacon strips for garnish (optional)
Instructions
First, preheat the oven to 400 degrees. Place 12 muffin liners in the muffin pan.
Next, mix ¾ cup of sugar (organic or regular), ¼ cup of Canola oil or Vegetable oil, 2 eggs, one tablespoon of Pumpkin Spice Bakery Emulsion (optional), one teaspoon of vanilla extract (affiliate link), ¼ cup of water, and ¾ cup of pumpkin. Mix well.
Now, in a separate bowl, mix 1.5 cups flour (or whole grain pastry flour), ¾ teaspoon baking powder, ¼ teaspoon baking soda, ¼ teaspoon cloves (ground), ½ teaspoon cinnamon (affiliate link) (ground), ¼ teaspoon nutmeg (ground), and ¼ teaspoon salt.
Then, slowly add the dried ingredients to the wet ingredients and mix well.
After well mixed, stir in ½ cup semisweet chocolate chips and ½ cup pecans (chopped).
Place the batter into the muffin liners, filling them about ⅔ full.
Bake for 20 - 22 minutes.
Remove and let cool, then make the glaze if you wish and cook the bacon.
Drizzle the glaze on top with a spoon or turn the muffin over and coat the entire top with it. Then, add the bacon for garnish.
