Vegetable Cabbage Bean Soup Ingredients:
- 4 cups vegetable broth
- 5 cups Cabbage thinly sliced
- 1 can of Black beans
- 2 cans of diced tomatoes
- 1 cup carrots or baby carrots chopped
- One med onion chopped
- 1 can of tomato paste
- 2 teaspoon granulated garlic
- 1 teaspoon dried basil
- One teaspoon of dried oregano
- One teaspoon of dried marjoram
- 1 teaspoon dried sage
- One teaspoon of dried thyme
- ¼ teaspoon black pepper
- 1 teaspoon salt
- Optional cooked gluten-free meatballs or other cooked meat

Vegetable Cabbage Bean Soup Instructions:
Thinly slice the cabbage and set it aside. Peel and cut the carrots into slices. Add both to the slow cooker.

Add the black beans can. Make sure to rinse the beans before adding.

Add the diced canned tomatoes next.

Then, add the rest of the ingredients - vegetable broth, chopped onion, tomato paste, garlic powder, basil, oregano, marjoram, sage, thyme, and pepper, and stir in the slow cooker.

Cover and cook on low for 7-8 hours.

Substitutions / additions:
You can add a pre-cooked meat to this dish in the last hour. I liked using precooked meatballs or cooked sausage. One pound is enough.
Add .5 oz Portobello mushroom (dried) Soak before chopping to this dish for extra flavor and depth.
You can also add 1 teaspoon dried rosemary for more herb flavors to the recipe. Be sure to break the dried rosemary up into small pieces.
Instead of black beans, you can add 1 can of Red beans.
Tips when making this recipe:
If you want, you can add salt near the end of the cooking time, or you can add it at the beginning.
