This fun and easy "Angel Food Cake and Berries with Lemon Vanilla Whipped Cream" recipe is great for a quick sweet treat. It is terrific for a festive gathering. And pretty low in calories too. It makes a large amount and can be made ahead of time and shared with a small gathering. Here's how I made it.
What ingredients are in this recipe?
1 bunch of Blueberries
One bunch of Strawberries
1 ½ cup Heavy cream, cold
2 tablespoon sugar
2 teaspoon vanilla extract (Affiliate Link) (GF if desired)
1 teaspoon grated lemon rind
1 Angel food bundt cake (from the store or homemade) - if you want to make your own, I found this one on the Taste of Home website.

How to Make this easy dessert recipe?
Using the Microplane, grate the skin of the lemon. Set aside.
Clean the blueberries, set aside to dry on a paper towel.
Clean the strawberries and cut off stems and cut them into thin slices. Set aside to dry on a paper towel.
Cut the Angel food bundt cake into cubes.
Add heaving cream and sugar to the mixer (Affiliate Link). Start the mixer (Affiliate Link) on low and work your way up to high. Let go for a few minutes until it just gets stuff. Then add the lemon rind for a few seconds more. Then slowly mix in the vanilla.
At this point, you can either cut the angel food cake and start layering or you can toast the angel food cake in an air fryer (Affiliate Link).
How to toast the angel food cake recipe in an air fryer?
After you cube up the angel food cake, add it to the air fryer (Affiliate Link) rack. Set the air fryer (Affiliate Link) to 350 degrees for 3-5 minutes, depending on how many angel food cake squares you have. The more you have, the more time it will take.
How to assemble this angel food cake dessert?
Start with the Angel food cubes, and then place the strawberries and blueberries on top. Then add a dollop of lemon whip cream to the top.
