- 1 large onion chopped
- 2 red bell peppers chopped
- 1 lb red potatoes cubed into 1 inch pieces
- ½ cup of chicken broth (Affiliate Link)
- 1 teaspoon of dried oregano (Affiliate Link)
- 1 teaspoon dried thyme (Affiliate Link)
- 1 teaspoon dried rosemary (Affiliate Link)
- 1 bay leaf (Affiliate Link)
- Salt and Pepper to taste

Instructions
This recipe requires some prep at the beginning. But after that, you need to place the chicken in the slow cooker (Affiliate Link). Since it is a slow cooker (Affiliate Link) recipe with boneless, skinless chicken, it cooks within 4 hours on low.

First, chop the onions and peppers and set aside. Then, cut the potatoes into small 1-inch pieces. The roasted garlic was cooked earlier and stored in the refrigerator, so I minced the cloves into pieces and set all of these items aside.

Then, I added the olive oil (Affiliate Link) to the skillet added the onions and peppers, and sautéed it until they were softened, about 5 minutes on medium-high.
When the peppers and onions were softened, I added them to the Slow cooker (Affiliate Link).

Meanwhile, I added the cubed red potatoes, placed them and the chicken broth (Affiliate Link) into the slow cooker (Affiliate Link), and started it on low.

Then, add the chicken thigh pieces and the herbs, except for the bay leaf (Affiliate Link), and cook for 5 minutes, turning halfway through. When it was finished, I added the slow cooker (Affiliate Link).

I cooked the dinner on low for 4 hours. You can cook it on Sunday and reheat it for a quick, healthy dinner on a weeknight. Serve on a bed of cauliflower rice.
