This recipe is dedicated to those who love low-carb tots but can't have the dairy. This Zucchini tots recipe offers a perfect snack option for anyone who wants to enjoy tots while watching a movie or streaming a series. Follow along and make this gluten-free and dairy-free recipe today.

Why I was inspired to make this recipe?

Zucchini tots are a fantastic low-carb alternative to regular potato tots. Kids love tots with a bit of ketchup or other dipping sauces. So, to make zucchini tots for those adults that want to feel like a kid again, I created this recipe to allow everyone who is dairy and gluten intolerant to enjoy just like when they were kids.

What ingredients are in Dairy Free Gluten Free Zucchini Tots?

Cooking spray

4 cups grated zucchini small pieces about 2-3 regular size zucchinis

2 eggs scrambled

Catalina Crunch Low Carb Cereal

1 tablespoon graduated garlic

½ cup Dairy-Free Mozzarella shredded and chopped

One-Half cup of gluten-free breadcrumbs - I used Appel Foods Nut Crumbs - Natural Gluten-Free Italian flavor (Pecans, Almonds, and Cashews)

½ teaspoon kosher salt

black pepper to taste

How to make this Dairy Free Gluten Free Zucchini Tots recipe?

Step 1: Preheat the air fryer to 400 degrees. Scramble the two eggs in a large bowl.

Step 2: Cut off the ends of the zucchinis. With a grater, grate the zucchinis. Lay the grated zucchinis on a paper towel and cover it with paper towels. Press down to remove the excess. Swap out the paper towels and do it again. Let it sit out and change out the paper towels a few more times if you have time. It will need to sit for a few hours to get all the liquid out.

Place the pressed shredded zucchini in the large bowl. Note: There will be more liquid in the grated zucchini.

Step 3: Add the gluten-free bread crumbs to the bowl. Add a little more if it seems too watery.

Step 4: Add the granulated garlic, salt, and pepper to the large bowl.

Step 5: Now, use the knife and chop up the dairy-free mozzarella shredded. Add to the large bowl.

Step 6: Mix all the ingredients in the large bowl.

Add DF chopped shredded mozzarella to the remaining ingredients in the bowl

Step 7: Spray the air fryer tray with nonstick spray. Be sure to coat the entire rack.

Step 8: Now, it's time to make the zucchini tots. Wash your hands. With a tablespoon, scoop the mixture and place it in the hand. Over the large bowl, squeeze the mixture to remove any excess water into the bowl. Now, place it on the sprayed air fryer rack. They should measure about 2 inches long and 1 inch or less in diameter.

If more liquid comes out, squeeze with your hand when forming the zucchini tots

Step 9: Bake at 400 degrees for 15 minutes.

Step 10: Let it cool for a few minutes before enjoying.

Here is the finished dish. Doesn’t it look amazing? It is super delicious. It may make more if you make them smaller in size.

Recipe Hint:

Hint: Squeeze a tablespoon of the mixture over a bowl to remove the excess water. This will help keep them tighter, and the inside will dry out more when air-fried.

Substitutions You Can Use

If you want to make these regular instead of gluten-free, try these substitutions.

  • Add Regular BreadCrumbs - Add regular Italian Bread crumbs instead of the gluten free bread.
  • Gluten Free Breadcrumbs - if you want to try it with your favorite gluten free brand, that works too. Be sure to adjust the amount of breadcrumbs depending on the brand. If there is tapioca flour in your breadcrumb, watch out, it may get gummy after it cooks.
  • Carrots - If you want to add some color, add some grated carrots to the mixture.

Variations

If you want to spice it up, try these additions.

  • Spicy - add some cayenne pepper to the mixture when adding the granulated garlic, salt, and pepper.
  • Add a Dip - make a tomato sauce or ketchup (sugar free) dip for a little extra flavor.

Equipment Used for this Recipe

Equipment can have a significant impact on how a recipe turns out. A shredder is essential. You will also need an air fryer for this recipe. Here are some examples I found on Amazon (affiliate).

Storage

You can store the sweating shredded zucchini in the refrigerator for a few hours. The longer it lays out and pressed, the better.

The rest of the ingredients can be mixed together in a bowl in the refrigerator for a quick mix and rolled out to cook in a snap.

These ingredients don't stand up well to freezing.

Top Tip

Squeezing is IMPORTANT when making these zucchini tots and any other low-carb tots.
