Why was I inspired to make this recipe?
Zucchini tots are a fantastic low-carb alternative to regular potato tots. Kids love tots with a bit of ketchup or other dipping sauces. So, to make zucchini tots for those adults that want to feel like a kid again, I created this recipe to allow everyone who is dairy and gluten intolerant to enjoy just like when they were kids.
What ingredients are in Dairy Free Gluten Free Zucchini Tots?
- Cooking spray
- 4 cups grated zucchini in small pieces, about 2-3 regular-sized zucchini
- 2 eggs scrambled
- 1 tablespoon graduated garlic
- ½ cup Dairy-Free Mozzarella shredded and chopped
- One-half cup of gluten-free breadcrumbs - I used Appel Foods Nut Crumbs - Natural Gluten-Free Italian flavor (Pecans, Almonds, and Cashews)
- ½ teaspoon kosher salt
- black pepper to taste

How to make this Dairy Free Gluten Free Zucchini Tots recipe?
Step 1: Preheat the air fryer (affiliate) to 400 degrees. Scramble the two eggs in a large bowl.
Step 2: Cut off the ends of the zucchinis. Grate the zucchinis with a grater. Lay the grated zucchinis on a paper towel and cover them with paper towels. Press down to remove the excess. Swap out the paper towels and do it again. Let it sit out, and change the paper towels a few more times if you have time. It must sit for a few hours to get all the liquid out.

Place the pressed shredded zucchini in the large bowl. The grated zucchini will have more liquid.
Step 3: Add the gluten-free bread crumbs to the bowl. If the mixture seems too watery, add a little more.
Step 4: Add the granulated garlic, salt, and pepper to the large bowl.
Step 5: Now, use the knife to chop up the shredded dairy-free mozzarella. Add it to the large bowl.
Step 6: Mix all the ingredients in the large bowl.

Step 7: Spray the air fryer (affiliate) tray with nonstick spray. Be sure to coat the entire rack.
Step 8: Now, it's time to make the zucchini tots. Wash your hands. With a tablespoon, scoop the mixture and place it in your hand. Squeeze the mixture over a large bowl to remove any excess water. Now, place the tots on the sprayed air fryer (affiliate) rack. They should measure about 2 inches long and 1 inch or less in diameter.

Here is what they look like after you press all the liquid out.

Step 9: Bake at 400 degrees for 15 minutes.
Step 10: Let it cool for a few minutes before enjoying it.

Recipe Hint:
Hint: Squeeze a tablespoon of the mixture over a bowl to remove the excess water. This will help keep them tighter, and the inside will dry out more when air-fried.

Substitutions You Can Use
If you want to make these regular instead of gluten-free, try these substitutions.
- Add Regular Italian Bread Crumbs(affiliate) - Add regular Italian Bread crumbs instead of gluten-free bread.
- Gluten-Free Breadcrumbs(affiliate)-You can also try it with your favorite gluten-free brand. Be sure to adjust the amount of breadcrumbs depending on the brand.
- Watch out for Tapioca Flour in Your Breadcrumbs - If tapioca flour is in your breadcrumbs, they may become gummy after cooking.
- Carrots - If you want to add some color, add some grated carrots to the mixture.
Variations
If you want to add a bit of spice, try these additions.
- Spicy - add some cayenne pepper to the mixture when adding the granulated garlic, salt, and pepper.
- Add a Dip - make a tomato sauce (affiliate) or ketchup (sugar-free) dip for a little extra flavor.
